Roast Pumpkin & Tomato Pasta

  • 100 Grams Feta
  • 500 Grams Cherry Tomatoes
  • 1 Clove Garlic
  • 500 Grams Pumpkin
  • 60 Millilitres Olive Oil
  • 400 Grams Spaghetti
  • 0.5 Cups Parsley
  • 0.5 Cups Basil


  1. Preheat oven to 200°C
  2. While oven is heating, cut pumpkin into 1 - 2cm cubes.
  3. Drizzle the pumpkin with 1 tablespoon of oil in a baking dish. Bake for 10 mins. Add the tomatoes. Bake for another 15 mins, until pumpkin is golden and tomatoes soften.
  4. Meanwhile, cook the spaghetti in a large saucepan of boiling water following packet directions Drain, keeping 1?4 cup of the liquid. Return the spaghetti to the pan.
  5. Blend garlic, basil, parsley, remaining oil and the leftover cooking liquid in a blender until smooth. Season.
  6. Add the pumpkin & tomato to the spaghetti, Drizzle the herb mixture and toss to combine. Serve in bowls and top with fetta.
