Ham and Chive Quiches

  • 3 Whole Eggs
  • 300 Millilitres Cream (thickened)
  • 0.5 Cups Swiss Cheese
  • 100 Grams Ham
  • 0.25 Cups Chives
  • 3 Sheets Shortcrust Pastry


  1. Lightly grease 2 x 12-hole tartlet pans.
  2. Cut out 8 rounds from each sheet of pastry using a 5.5cm fluted cutter. Place rounds in tartlet pans.
  3. Divide ham amount pastry cases. Combine eggs, cream and chives in a jug. Pour mixture into pastry cases. Sprinkle tops with cheese.
  4. Cook in a moderate oven 180°C (350°F) for about 20 minutes or until golden brown.
  5. Serve quiches warm.
