Creamy vegetable and pesto bake

Ingredients

  • 0.3 Cups Mozzarella Cheese
  • 1 Cup Parmesan Cheese
  • 300 Millilitres Cream (thickened)
  • 0.3 Cups Peas
  • 250 Grams Cauliflower
  • 0.3 Cups Capsicum
  • 0.3 Cups Corn
  • 250 Grams Broccoli
  • 0.5 Onion
  • 2 Tablespoons Basil Pesto
  • 0.3 Cups Panko Breadcrumb
  • 2 Tablespoons Plain Flour

Instructions

  1. Preheat oven to 200°C.
  2. Cook cauliflower & brocolli in a saucepan of boiling water for 2 minutes. Drain & transfer to a bowl. Add peas, corn, capsicum, and onion. Add flour & season. Transfer to baking dish.
  3. Whisk cream, pesto and 1/2 cup parmesan. Pour over vegetables in dish. Combine remaining parmesan, mozzarella and breadcrumbs. Sprinkle over vegetables.
  4. Bake for 20 minutes then Serve.
