120 Millilitres Cream (thickened)
250 Grams Chorizo
400 Grams Tinned Tomatoes
1 Whole Onion
2 Cloves Garlic
0.5 Tablespoons Olive Oil
250 Grams Penne
Boil a large, salted saucepan of water for. Put the pasta in & cook according to package directions.
Meanwhile, roughly slice the chorizo and dice the onion.
In a frying pan over medium-high heat, add the olive oil and chorizo and fry it until it starts to get crispy (around 8 minutes).
Add the onion and cook it until it's softened (about 4 minutes).
Stir in the garlic, tomatoes, and cream. Let the sauce simmer for another 5 minutes, or until the sauce is reduced to your liking. Season with salt & pepper.
Combine with the pasta and serve.
